CLASSIFICATION: Brut Rosé quality sparkling wine.

YEAR: 2011

GRAPE VARIETIES: Based on Gavi grapes and Pinot Nero grapes.

PRODUCTION ZONE: High hill, Rovereto Superiore di Gavi.

SPARKLING TECHNIQUE: Classical fermentation in the bottle, long-aging on the native lees until to over ten years.

BEST CONSUMPTION PERIOD: Traditional, to be consumed within two / three years since working.(dégorgement).

SERVING TEMPERATURE: 8 °C.

APPEARANCE: Pink clear, pale

NOSE: Light spicy, intense and persistent. Pastry notes, white chocolate. Since the first impression of a warm amber it evolves to intense hints of exotic fruits, which bleed into honey and spices in a soft and elegant combination.

PALATE: It respects perfume, important, dry, full, decided backbone and crisp; velvet cloth and continuous, refined by the long stay on the lees; pleasantly sour, with pleasant hint of almond. The final is of rare beauty with hints of candied fruit.

GASTRONOMIC ACCOMPANIMENTS:  Ideal as an aperitif and “all meal” use in important lunches, very suitable for post-lunch and “meditation”.

Only from the best grapes, only in the best years, begins the journey of this sparkling “D’Antan” rose. This wine comes from a refined cuvée composed mostly by white Cortese grapes and black grape of Pinot Nero. By using slow and traditional processing methods, this sparkling wine can offer an exclusive intensity and uniqueness of sensations. The long aging in bottle, at least 10 years, in contact with native yeast selected in our cellar, offers the result of a wine that does not seem to find limits of age and discovers time as great and faithful ally.

A rare wine – unique in its kind – designed for a small circle of connoisseurs, the fruit of a particular moment of happy nature, and an infinite and patient work.
